Japanese pan cake with anko (Dorayaki, どら焼き)

Dorayaki is Doraemon's favourite food. I did not expect that we can make Dorayaki on our own. Good oyatsu (snacks in Japanese) with a glass of milk, or a cup of green tea!

Ingredients

  • Eggs: 3
  • Sugar: 150 g
  • Honey: 1 tablespoon
  • Mirin: 1 tablespoon (otherwise 1 tablespoon of cooking sake and 1 teaspoon of sugar)
  • Baking soda: 1 teaspoon
  • Water (A): 50 cc
  • All-purpose flour: 180 g
  • Water (B): 50 cc
  • Anko: Adjust for your taste (to learn how to prepare anko, check this page.)

Instructions

  1. In a large bowl, beat 3 eggs and add some sugar. Then add mirin and honey. Whisk well until the mixture becomes fluffy.
  2. Dissolve baking soda in water (A). Sift flour into the bowl and mix all together gently. Keep in a fridge to rest for about 30 minutes.
  3. Add water (B) and mix them.
  4. Grease oil in a frying pan and heat it. Then turn down the heat to low.
  5. With a ladle, pour 3 Tbsp. of the batter from about 10 cm above the pan to create 8 cm diameter pancakes.
  6. When you see the surface of the batter starts to bubble, flip over and cook the other side for 20 ~ 30 seconds.
  7. When the pancakes are cooked, cover with a plastic film or a wet cloth immediately to prevent drying. Continue making pancakes. You can cook 16~20 pancakes.
  8. Put some anko on a pancake. If the texture of anko is too thick, knead it by adding a small amount of water.
  9. Take another pancake make a sandwich and wrap it with a plastic film. Press their rim gently.

[TIPS]

Baking pancakes with a lid makes them moist and soft. Without the lid pancakes solid texture. You can cook in both ways depending on your taste.
