Katsudon (かつ丼)

 

Katsudon is one of Donburi foods, in which Tonkatsu and onions are simmered with soy-based noodle soup and beaten egg served over freshly cooked rice. The most often used deep-fried food for Katsudon is Tonkatsu. However, there are also other kinds of deep-fried foods such as beef cutlets, chicken cutlets, Menchi-Katsu, and shrimp cutlets. Also, there are some different style of foods called Katsudon. The standard Katsudon is introduced in this recipe.

Ingredients

(for 2 servings)

  • Tonkatsu 2 sheets
  • Onion 1 (about 100 g)
  • (A) Soy sauce 2 tbsp
  • (A) Mirin 2 tbsp (otherwise 1.5 tbsp of white wine and 0.5 tbsp of sugar)
  • (A) Dashi powder 1 tbsp
  • (A) Water 50 mL
  • Eggs 4
  • Freshly cooked rice 2 cups (as much as you want)
  • Pickled ginger (for toppings, optional)

Instructions

  1. Cut the onion into 5 mm wedges. Slice the Tonkatsu about 1.5 cm in width.
  2. Beat the eggs in a bowl.
  3. Mix the condiments (A) in a frying pan. Heat the frying pan until it comes to a boil.
  4. Add the cut onion to the frying pan. Simmer them over medium heat for a few minutes.
  5. Place the Tonkatsu evenly in a frying pan. Then pour the beaten eggs evenly on the surface and simmer for about 2~3 minutes. Then put a lid over the frying pan and turn the heat off. Leave the frying pan for a few minutes.
  6. Serve the freshly cooked rice in a bowl and serve the meal over the rice.
